Two Bean and Corn Salad (Ensalada de Dos Frijoles y Elote)

Ingredients:
• 1/3 cup vegetable oil
• 2 tablespoons balsamic vinaigrette
• teaspoon cumin
• (15-ounce) can black beans, drained and rinsed
• (15-ounce) can Great Northern beans, drained and rinsed
• stalks celery, chopped
• cups canned corn
• medium red bell pepper, chopped
• cup chopped red onion
• 1/3 cup chopped fresh cilantro (optional)
• small jalapeno peppers, seeded and chopped (optional)

Directions:
In a large bowl, whisk oil, vinegar, and cumin. Add remaining ingredients and toss to coat.
Serve immediately or refrigerate for up to 1 hour to allow flavors to blend.


Ingredientes:
• 1/3 taza de aceite vegetal
• 2 cucharadas de vinagre balsámico
• cucharadita de comino
• (15-onzas) una lata de frijoles negros, colar y enjuagar
• (15-onzas) una lata de frijoles blancos (Great Northern beans) colar y enjuagar
• Palitos de apio, picado
• tazas de elote enlatada
• pimentón rojo, (chile campana) picado
• taza de cebolla roja picada
• 1/3 taza de cilantro fresco picado (opcional)
• chile jalapeños pequeños, picados y sin semillas (opcional)

Direcciones:
En un contenedor grande, revuelva el aceite, vinagre balsámico y comino. Añada los demás ingredientes y revuelva. Servir inmediatamente o refrigerar por 1 hora para que los sabores se mezclen bien.
