Sweet Potato and Bean Burrito (Burrito de Camotes y Frijol)

Ingredients:
• 2 large sweet potatoes peeled and diced.
• 4 teaspoons of vegetable oil, divided
• 1/2 onion diced
• 2 cups cooked or canned black beans; rinsed and drained.
• 1/2 teaspoon ground cumin, salt and pepper tortillas
• 8 whole wheat tortillas

Directions:
Preheat oven to 375˚. In a large mixing bowl, toss the sweet potato chunks with 3 teaspoons oil. Spread the sweet potatoes on a baking sheet and roast them in the oven for 20 minutes or until they are tender. In a large skillet, heat 1 teaspoon oil over medium-high heat. Add diced onion and sauté until tender. Add beans, cumin, salt, and pepper to taste. Remove from heat and mix in cooked yam chunks, stirring gently. Spoon mixture into the center of each tortilla. Roll up the tortilla and serve. Serves: 8


Ingredientes:
• 2 camotes grandes, pelados y cortados
• 4 cucharadas de aceite vegetal, divididas
• 1/2 cebolla, cortada
• 2 tazas de frijoles negros, cocidos o de lata, lavados y desaguados.
• 1/2 cucharadita de comino, sal, y pimienta
• 8 tortillas integrales

Direcciones:
Precaliente el horno al 375˚ F. En un tazón grande, mezcle los cubos de camote con las 3 cucharaditas de aceite. Ponga los camotes en un molde para el hornear y cocínelos en el horno por 20 minutos o hasta que estén tiernos. En un sartén grande, caliente una cucharada de aceite a fuego fuerte. Ponga la cebolla cortada y cocínela hasta que esté tierna. Añada los frijoles, comino, sal, y pimienta al gusto. Quite el sartén del fuego y mezcle el camote cocido, revolviéndolo con suavidad. Ponga la mezcla en medio de cada tortilla. Haga rollos y sirva. Sirve: 8 personas.
