Rotini with Lentils (Pasta con Lentejas)

Ingredients:
• 1/2 cup lentils, dried
• 1 1/2 teaspoons oil
• 1 small onion, chopped
• 1 medium carrot, chopped
• 3 cloves garlic, minced
• 1 cup reduced-sodium chicken broth
• 1 teaspoon chopped fresh rosemary or a pinch dried
• 1 teaspoon fresh thyme, or 1/2 teaspoon dried
• 1 14oz can tomatoes, drained and chopped
• 3 cups (1/2 bunch) coarsely chopped dark green leafy vegetable like kale leaves, spinach or swiss chard
• Salt & ground pepper to taste
• 1/2 pound whole-wheat rotini
• 1/4 cup grated cheese

Preparation:
Place lentils in a medium saucepan and cover with cold water; bring to a boil and cook for 5 minutes. Drain and rinse with cold water.

Heat oil in a nonstick skillet over medium heat. Add onions, carrots, garlic and sauté until the vegetables are softened, 3 to 5 minutes. Add broth, lentils, rosemary and thyme and bring to a boil. Reduce heat to low, cover and simmer for 15 minutes. Add tomatoes and dark green leafy vegetable, return to a simmer, cover and cook until the lentils and vegetable are tender, 15 to 20 minutes longer. Season with salt and pepper.

Meanwhile, cook rotini in a large pot of boiling salted water until tender,10 to 12 minutes. Drain and place in a large, shallow bowl. Add the lentil sauce and toss well. Taste and adjust seasonings and serve immediately with cheese.


Ingredientes:
• 1/2 taza de lentejas secas
• 1 1/2 cucharaditas de aceite
• 1 cebolla pequeña, cortada
• 1 zanahoria mediana, cortadas
• 3 dientes de ajo, cortado fino
• 1 tazas de caldo de pollo sin mucha sal
• 1 cucharadita de romero fresco y cortado, o menos si está seco
• 1 cucharadita de tomillo fresco, o menos si está seco
• 1 lata de 14 onzas de tomates, desaguados y cortados
• 3 tazas (1/2 ramo) de vegetal verde de hojas oscuras como espinaca, repollo rizado, o acelga suiza
• Sal y pimienta al gusto
• 1/2 libra de pasta rotini integral
• 1/4 taza de queso sin grasa rallado

Preparación:
Ponga las lentejas en un sartén te tamaño mediano y cúbralos con agua fría. Hierva el agua y cocine por 5 minutos. Desagüe las lentejas y enjuague con agua fría.

Caliente el aceite en un sartén a fuego normal. Añada la cebolla, zanahoria, ajo, romero y tomillo y cocine hasta que los vegetales estén tiernos (3-5 minutos.) Añada el caldo y lentejas y hierva la mezcla. Reduzca el fuego, cubra el sartén y déjelo hervir por 15 minutos. Añada tomates y el vegetal verde y déjelo hervir otra vez. Cubra el sartén y cocine hasta que las lentejas estén tiernas, 15-20 minutos más. Ponga sal y pimienta al gusto.

Al mismo tiempo, cocine la pasta rotini en una olla grande de agua hirviendo con sal hasta que esté tierno, 10-12 minutos. Desagüe la pasta y póngala en un tazón grande. Añada la salsa de lentejas y mézclelo bien. Saboree la pasta y ajuste las hierbas y la sal como quiera. Sirve inmediatamente con el queso encima.
