One Dish Lentils (Lentejas en una Olla)

Ingredients:
• 1 cup uncooked and rinsed lentils
• 1/2 cup uncooked brown rice
• 3 cup sliced carrots
• 1 bunch fresh Swiss chard, Kale or Spinach cleaned and chopped
• 3 cups water
• 1 packet reduced sodium onion soup mix
• 1 tsp basil
• 1 Tbsp olive oil

Directions:
Place all ingredients in large pot. Bring to a boil. Reduce heat, cover and cook until rice is done, 20 to 30 minutes. If substituting cream cheese for the onion soup mix, add just before serving.

Substitutions:
• One 16 oz bag frozen green vegetable for bunch of fresh vegetable
• 8 oz light cream cheese for the onion soup mix


Ingredientes:
• 1 taza de lentejas crudas y lavadas
• 1/2 taza de arroz color café crudo
• 3 tazas de zanahorias ralladas
• 1 ramo de acelga suiza, repollo rizado, o espinacas cortado y lavado
• 3 tazas de agua
• 1 paquete de sopa de cebolla deshidratada de bajo sodio
• 1 cucharadita de albahaca
• 1 cucharada de aceite de oliva

Instrucciones:
Poner todos los ingredientes en una olla grande. Hervir el agua. Bajar la calentura, cubrir la olla, y cocinar hasta que el arroz esté tierno, 20 o 30 minutos. Se puede sustituir el queso crema en vez de la sopa deshidratada, añadir justo antes de servir.

Sustituciones:
• Una bolsa de 16 onzas de un vegetal verde y helado en vez de un ramo de verdura fresca.
• 8 onzas de queso de crema sin grasa (light) en vez de la sopa deshidratada
