Fall Vegetable Medley (Mezcla de Verduras del Otoño)

Ingredients:

• 4 Sweet Potatoes or 2 Winter Squash
• 4 Granny Smith Apples
• 2 Yellow Onions
• 2 tbsp. Olive Oil (or Canola oil)
• Salt
• Pepper

Directions:

Pre-heat the oven to 400° F. Peel and cube the sweet potatoes/squash. Core and thinly slice the green apples. Thinly slice the onions. Mix together all of the vegetables and drizzle with olive oil. Sprinkle with salt and pepper. Stir to make sure all of the vegetables are evenly coated. Spread the mixture evenly on a baking sheet and put in the oven. Stir occasionally making sure that all vegetables are evenly cooked and so that they do not stick to the pan. Remove after 30 minutes or until softened and golden. Serve.


Ingredientes:

• 4 Camotes o 2 Calabazas
• 4 Manzanas verdes
• 2 Cebollas amarillas
• 2 cucharadas de aceite de olive (o aceite vegetal)
• Sal
• Pimiento

Direcciones:

Pre-calentar el horno a 400° F. Pelar y cortar en cubitos los camotes o calabaza. Quitar las semillas de las manzanas y cortarlas en rebanadas. Cortar las cebollas en rebanadas también. Mezclar todos los vegetales y poner un poco de aceite. Poner un poco de sal y pimiento. Mezclar todo para estar seguro que todos tienen aceite. Ponerlo todo en el horno. Batir de vez en cuando para que los vegetales no peguen. Sacar los verduras después de 30 minutos o hasta que estén suaves y doradas. Servir.
