Corn and Green Chili Salad (Ensalada de Elote y Chile Verde)

This salad is so easy to prepare. Add some diced, cooked chicken to make this side dish a meal or sprinkle it over salad greens. Cooked beans, chopped avocado, or a crumbly cheese would also be a great addition. You could also use salsa to replace the oil and lime juice.

Ingredients:
• 1 (15 oz) can corn, drained
• 1 (10 oz) can diced tomatoes with green chilies, drained
• 1/2 tablespoon vegetable oil
• 1 tablespoon lime juice
• 1/3 cup green, white, or red onions, chopped
• 2 tablespoons fresh cilantro, chopped

Directions:
Combine all ingredients in a medium bowl. Mix well and serve.


Esta ensalada es tan fácil de preparar. Ponga un poco de pollo, cocido y cortado para hacerlo un plato fuerte o combínelo con lechuga. Frijoles cocidos, aguacate cortado, o queso fresco sería una opción rica. También se puede usar salsa fresca en vez del aceite y jugo de limón.

Ingredientes:
• 1 lata de elote de 15 onzas, desaguado
• 1 lata de tomates cortados con chiles verdes de 10 onzas, desaguados
• 1/2 cucharada de aceite vegetal
• 1 cucharada de jugo de limón
• 1/3 taza de cebolla verde, blanca, o morada, cortada
• 2 cucharadas de cilantro fresco, cortado

Direcciones:
Combine todos los ingredientes en un tazón mediano. Mézclelo bien y sirva.
