Black Eyed Peas and Pasta (Frijoles Caritas y Pasta)

Ingredients:
• 1 cup chopped green pepper
• 1/2 cup chopped onion
• 1 jalapeno pepper, seeded and chopped (optional)
• 3 garlic cloves, minced
• 1 tablespoon olive or canola oil
• 1 (28 ounce) can crushed tomatoes
• 1 C cooked black-eyed peas
• 1 tablespoon minced fresh cilantro
• 1 teaspoon cider vinegar
• 1 teaspoon sugar
• 1 teaspoon salt
• 1/8 teaspoon pepper
• 5 cups hot cooked pasta

Directions:
In a large skillet, sauté green pepper, onion, jalapeno and garlic in oil for 5 minutes or until tender. Add tomatoes; bring to a boil. Simmer, uncovered, for 10 minutes. Stir in black eye peas, cilantro, vinegar, sugar, salt and pepper; simmer 10 minutes longer. Toss with pasta and serve immediately.


Ingredientes:
• 1 taza de pimentón verde cortado
• 1/2 taza de cebolla cortada
• 1 pimento jalapeño cortado, con las semillas quitadas
• 3 dientes de ajo, cortados
• 1 cucharada de aceite oliva
• 1 lata (de 28 onzas) de tomates cortados
• 1 taza de frijoles caritas, cocidos
• 1 cucharada de cilantro fresco, cortado
• 1 cucharadita de vinagre de sidra
• 1 cucharadita de azúcar
• 1 cucharadita de sal
• 1/8 cucharadita de pimienta
• 5 tazas de pasta cocida, caliente

Direcciones:
En un sartén grande, sofría el pimentón verde, cebolla, jalapeño, y ajo por 5 minutos o hasta que estén tiernos. Agregue los tomates y déjelos hervir por 10 minutos sin tapa. Agregue los frijoles caritas, cilantro, vinagre, azúcar, sal, y pimienta y déjelo cocinar por 10 minutos más. Mézclelo con la pasta y sírvalo inmediatamente.
