Ready to meet peach cobbler’s healthier (and dare we say more delicious) cousin? You are welcome in advance for your new favorite go-to summer dessert. These grilled nectarines topped with granola and honey are bursting with flavor, only take a few minutes to make and don’t require you to turn on your oven on a hot summer day! This treat is a game changer!
- 2 nectarines (or peaches), halved and pitted
- 1TBSP olive oil
- 2 TBSP honey
- 1 pinch of salt
- ½ cup granola
- 1 tsp baking powder
- 2-4 mint leaves
Start with a clean outdoor grill and brush grates with oil to prevent sticking.
Bring up to a medium heat.
Rub nectarine halves with olive oil and sprinkle with salt.
Place nectarine halves flesh side down on grill for 3-5 minutes until sear marks appear (check after 3 minutes).
Place grilled nectarines on a plate or in a bowl and sprinkle granola on top.
Drizzle honey over nectarines and granola.
Mint leaves can be used as garnish or mince them up and sprinkle them around for additional flavor depth!
